The development of standard food models representing each a major food categories made it easier, for public and private research partners, to pool their knowledge and to enable partners of the food industry, especially SME's, to benefit from models that are both generic and realistic enough to optimize their existing processes or to come up with new ones. DREAM project succeeded in developing food models with well-characterized structures for simulating the impact of processing on the nutritional and microbiological food properties. Nevertheless the knowledge of the structure and their change during processing are key data for understanding the effect of food on the human health and well-being. Although scientists have a good grasp of the former, the control of food structure remains difficult.
